8th July: Connect group day! We decorated cupcakes - chocolate ones with mint icing and after eight mints, coffee ones with mocha icing and chocolate sprinkles, elderflower ones with vanilla icing and strawberries, and vanilla ones with vanilla icing and assorted decorations! Oh boy, they were yummy....

Okay, what is the secret to getting icing that looks that good? I must make mine way too runny.

They are nice looking cakes, aren't they?! Amy, it's probably "Buttercream icing", which is a mixture of icing sugar (powdered sugar) and butter/margarine. That makes it stiff and beating can make it fluffy too. Some people also add hot water, I believe, though I have not learned to do this method...
Of course, Mel may have used a "secret" technique that I also don't know!!
You can also use a stiff Royal Icing with glycerine added, but I haven't got the recipe handy right now.
Maybe Mel will share the secret with us...

Thank you - but I can't take credit for the icing, somehow I can never get my buttercream to a nice smooth piping consistency! I made the cakes and my friend who runs the group with me made the icing. I shall ask her for the recipe and the exact ingredients she used and hope that my next effort will neither be too stiff nor too soft!
