6 of 365



I so *love* this photo :-) Evidence that the snow did start to melt - though that caused problems of its own, when the temperature dropped again and everything froze solid!

And for dinner, I experimented with a few ingredients we had to hand, having not managed to get to the supermarket as planned:



'Oriental' salmon fillets with oven-baked 'saute' potatoes and mixed vegetables. We had some salmon in the freezer so I defrosted a couple of fillets, marinated them in soy sauce, garlic paste, ginger paste and honey, and added a little lemon juice just before cooking. Then I sprayed a couple of pieces of foil with olive oil spray, put a piece of salmon on each and poured over the marinade, loosely sealed each parcel and stuck them on a baking tray in the oven for 20 minutes. (The steam trapped in the parcel helps the fish to cook. Be careful when you open the foil though, the steam is hot!) For the potatoes, I thinly sliced them, arranged them on a baking tray (also sprayed with the oil), sprayed the top and sprinkled over a bit of chilli powder. These need about 30 minutes in the oven (though it depends how thinly you slice them!)

I love this way of cooking fish or chicken, and we've tried lots of different flavourings in those parcels - the simplest is just a dab of butter and some herbs :-) Look out for more variations soon!

We're pretty strange in that we like to make our salmon quite crispy - so sometimes I buy the thin stuff (that's supposed to be used for canapes) and grill it. Oh, perfection! Your's looks quite delicious though - may have to give it a try :)

Yum, I love salmon and yours looks really yummy. My favourite way of cooking it is to rub olive oil into it, coat with cajun seasoning and cook in a frying pan for a few minutes. It is so so yum.

The top picture is beautiful! And your meal looks yummy! I've cooked fish and chicken in foil parcels before and it's really good - haven't done it in a long time so thanks for the reminder! :o)

lovely snaps! i've missed 3 days on on 365 but didn't have stuff to photograph...but I have memories and can fill in the blanks :) as my template has a little place for a story too!

i didnt twist your arm either. It was just bribery haha!!
