I've always made my own mince pies (with my own homemade mincemeat, too), but last year I came across a variation that was completely new to me. Pastry case, layer of mincemeat, then sponge cake on top:

The recipe paper from Shimelle's kit was perfect for this page. I also added a leftover strip of the paper from Day 1, edged with my Threading Water punch. The background is a lightly textured off-white cardstock. I stapled a scrap of crocheted lace (also from the kit) to an Elle's Studio number, and the title was formed from one of the flash cards which was printed with the word 'Christmas'. My first idea was to stamp the word 'cookery' but I didn't like the effect, so I trimmed that bit off (you can just see a smidge of the ink on the bottom edge of the card, but pretend you can't, huh?!) and added rub-ons instead.

I've always been a bit 'take it or leave it' when it comes to mince pies - but, with sponge on the top - yes please!

I don't even like mince pies but these look gorgeous and I've just added 'jar of mincemeat' to my shopping list for tomorrow!

Yum, sounds lovely! I may have to try these... and some jam or apple ones for the boys (who don't like mincemeat, shock, horror...all the more for me!)
Love the page. Can't spot the ink. The different fonts all go together so well and the whole thing is really well laid out. Looks great, even if it was a "quick fix" one!

Those mince pies look yummy...kinda remind me of the bakewell tartlets my Mum used to make!! May have to get baking myself!!
